1 cup lentils (uncooked)
1 can (14 oz.) coconut milk (or fresh if available)
1 cup distilled water
1 Tablespoon green chilies or to taste (chopped fine) (Optional)
1 inch raw ginger or to taste (chopped fine)
1 handful fresh cilantro (chopped)
1 lemon (juice from)
Cayenne pepper (pinch or to taste)
1/4 teaspoon of each of the following: Celtic Sea Salt, coriander, turmeric, ginger powder, cumin, cloves, cinnamon, nutmeg, & paprika
- Place all ingredients in a pot, and bring to boil.
- Turn down and simmer on low till lentils are soft (about one hour).
- Serve with lots of brown or basmati rice and a big salad. So yummy! ENJOY!
