Having grown up in Southern California, Mexican food has always been a staple for me. – Dr. Paul
A Paleo diet style doesn’t include corn tortillas – a substitute for the tortilla would be to use lettuce leaves as ‘taco wraps’.
1/2 lb (per person ) cut up or ground beef, pork, turkey, chicken (or in this video, venison)
1/2 large onion or 2-3 shallots, chopped
organic butter
Organic* corn tortillas or lettuce leaves
Taco Seasoning (without MSG – listed as yeast extract or torula yeast); or make your own: sea salt, chili powder, cayenne pepper, and cumin, to taste
Optional: raw cheddar cheese, shredded
Hot sauce or salsa
-
- Melt butter in medium sauté pan over low-medium heat
- Add onion and cook for 3-4 minutes (longer if the meat you’re using is already cooked, i.e. leftovers)
- Add meat; if raw, cook for 4-5 minutes
- Add seasoning
- Warm tortillas on griddle or in toaster oven
- Assemble tacos:
- Warm tortilla or lettuce leaf
- Seasoned meat mixture
- Optional shredded raw cheese
- Hot sauce or salsa
- Serve with steamed broccoli and/or green vegetable salad
* Whenever buying any corn product, it’s very important to buy ONLY organic products. Sadly, thanks to the merciless campaign by chemical criminal Monsanto (now Bayer), genetically modified foods (GMO, for genetically modified organism) have become commonplace in America (most other countries ban Monsanto GMO crops). Making the matters worse, is our spineless Monsanto lobbyist-influenced legislators in the U.S. who refuse to require GMO foods to be labeled as such. So, the only safe recourse is to buy certified organic.
